Smoothie Muffins

I’ve wanted to share this recipe for a while as it’s one of my kids and our family’s favorites! We have one more week of school left ( hallelujah ) so I made my last batch this weekend for their lunches and after school snacks and snapped some pics to share with ya’ll —

This recipe is from my very first recipe book that was given to me when me and Steve were just married that was a blender recipe for banana muffins.. I’ve adapted it over the years and have it pretty much perfect with just the right amount of healthy stuff, yet tasty enough that the kids still gobble it up. The best part is that there is no sugar, so it’s the perfect recess snack for Levi and Dion.

RECIPE FOR SMOOTHIE MUFFINS:

Heat oven to 350 F

Mix together:
1 1/2 Cups FLOUR
1  TSP baking soda

BLEND in blender:
1/2 cup Melted Butter OR 1/2 cup olive oil
2 ripe bananas
2 eggs
1 tsp Vanilla
2 handfuls of spinach
Hemp seeds
Sprinkle of cinnamon
3 Pitted dates OR 1/2 cup sugar

** I’ve also added in before: blueberries or a zucchini or a carrot, — you name it. It’s weird, but somehow it always just works out haha **

Mix blended ” smoothie ” liquids into dry ingredients, stir until combined and add in
3/4 cup chocolate chips.

Put into muffin trays and cook for 25- 30 minutes

Voila!
